Who loves bananas?! Who has to sing the Gwen Stefani song to spell bananas still? Bananas area hit or miss item in our household. Either everyone loves them or everyone hates them. The last batch we had delivered by Instacart and they were a miss! They were soft and bruisy like someone had dropped them on the ground or they had been sitting there for too long waiting for someone to pick them.
I'm a firm believer that no banana should go wasted. Why you may be asking well the fact that its loaded with fiber, potassium and magnesium should be enough. It's sweet too and not due to all those refined sugars we find lurking around our candy bars and processed foods. So when our bananas get a little too dark and spotty for eating I go straight to banana bread! So good and wicked easy to make especially if you follow this awesome recipe I'll link to at the end.
This week I had my little helper do all the mixing and some of the measuring all on her own. Although it's hard for me to give up control in the kitchen and even harder for my mother, I feel kitchen skills are a very important skill to learn even at an early age. Not to mention the fact you can turn it into a fun math and science lesson. Below we have the muffins easy to grab in the morning when you are still trying to get on a good school schedule.

We can't forget the loaf. This one we did with Bob's Red Mill gluten free flour. Let me tell you it turned out amazing! I mean moist and light which I find a bit unusual for anything gluten free!
